Squamish has had long-table dinners on a farm and at Fergie’s Cafe in Paradise Valley, and now the owners of a new local catering company think residents are ready for a downtown whisky dinner, long-table style.

St. Bernard’s Fine Catering and Whisky are throwing a Whisky Dinner Party on Saturday, Dec. 2nd, at 7 p.m. at The Ledge.

The company’s Natasha Golbeck, who moved to Squamish with her young family in September, said the vibe she hopes to create with the dinner is communal and friendly, which long-table style events lend themselves to.

“You are sitting with people you don’t necessarily know, but who do tend to have shared interests around good food and drink, so people have things in common to talk about,” she said.

Though new to Squamish, the catering company, run by Golbeck and her husband Aaron, is no stranger to this type of event, having previously hosted supper clubs in Vancouver.

“It makes us so happy and it is so much fun,” Golbeck said. “It feels like a passion project for us.”

Some people — women, in particular — can be resistant to trying whisky, Golbeck acknowledged, but with the right food pairing, the drink is very satisfying, she said.

“It is like a mutually beneficial situation,” she said, with a laugh. “Neither one upstages the other. They both bring out new and richer complex flavours in each other.”

Every bottle of Whisky has a story to it, she added, and often people who enjoy whisky also enjoy the nostalgia of it.

“It has been done like this for 300 years,” she said.

“You can learn all about what it was aged in and what kind of wood and how did they toast the wood.”

Wine will be available as well, for those who really don’t like Whisky.

The dinner menu is still being hashed out, but it will be three courses and will likely include free-range brisket. The dessert will consist of chocolate from Squamish’s Xoco Westcoast Chocolatiers, she said.
